Steak tartare of mountain cattle from Sunnanhed with rainbow trout roe from Älvdalen

 Tartare of slow-baked beetroot & fermented red cabbage with goats curd mousse

Main

Hay-smoked rainbow trout from Älvdalen

or

Falafel from Rättvik’s pea

both served with a salad of homegrown leaves & local heritage grain “Dalavete”, herb dressing & fresh potatoes
